Understanding the fats that built — and broke — our modern metabolism.
Every human cell is made of fat. It’s the structure of life itself. But not all fats act the same.
In ancestral diets, omega-3 and omega-6 fatty acids existed in harmony — roughly 1:1. These fats controlled inflammation, supported cell integrity, and fueled brain and immune function.
Today, that balance has shifted dramatically. The modern Western diet delivers 10–20 times more omega-6 than omega-3, largely from processed seed oils (soybean, sunflower, corn, and canola).
Here’s what the science reveals:
⚡ Linoleic acid (LA) — the main omega-6 fat — is highly unstable when heated, leading to the creation of oxidized lipids that trigger chronic inflammation.
🧬 These oxidized metabolites interfere with mitochondrial function — reducing energy production and promoting insulin resistance.

Ingredients:
1 can sardines (in olive oil or water)
1 tbsp butter
Juice of ½ lemon
Sea salt & cracked pepper
Steps:
Heat butter in a small skillet over low-medium heat.
Add sardines and gently warm through.
Finish with lemon juice, salt, and pepper.
